Angel's Funnel Cake

Angel’s version — doubled from the original recipe.

Ingredients

  • ½ cup milk
  • 2 eggs
  • 2 tablespoons water
  • 1 teaspoon vanilla extract
  • 2 tablespoons granulated sugar
  • 1½ teaspoons baking powder
  • 2 pinches salt
  • 1 cup all-purpose flour
  • 4 tablespoons powdered sugar, for serving
  • Oil for frying

Instructions

  1. Whisk together milk, eggs, water, and vanilla extract.
  2. Add sugar, baking powder, and salt. Whisk to combine.
  3. Add flour and whisk until smooth with no lumps.
  4. Heat 1–2 inches of oil in a deep pan to 375°F.
  5. Pour batter through a funnel or squeeze bottle into the hot oil in a circular, criss-cross motion.
  6. Fry until golden, about 2 minutes per side. Flip carefully.
  7. Drain on paper towels and dust generously with powdered sugar. Serve immediately.
